What you need…
• 1 cup (256 g) smooth peanut butter
• ¼ cup (84 g) honey
• 1 tsp vanilla extract (optional)
• ½ cup (60 g) vegan protein powder
(We used Nature’s Way Instant Natural Protein, unflavoured)*
• 1 tbsp dairy‑free dark chocolate (vegan) chips
• Sea salt, to finish
* A 400 g pack of protein powder which goes a long way, making this a cost‑effective pantry staple.
Instructions
In a medium microwave‑safe bowl, warm the peanut butter for around 45 seconds until just soft. Immediately stir in the honey. Add vanilla if using.
Stir through the protein powder until well combined. The mixture will be thick.
Line an 8 × 8 tin with baking paper. Press the mixture evenly into the tin. Place another piece of baking paper on top and gently flatten. Avoid over‑pressing.
Sprinkle with dark chocolate chips and a pinch of sea salt.
Refrigerate for at least 4 hours or overnight (recommended) until firm.
Cut into 6 bars and enjoy. Keep refrigerated, as the bars soften quickly at room temperature.
