Chocolate Truffles

After more than 360 training sessions, countless adventures and even more laughs with Diamonds, Ann Holland has shared with us one of her favourite sweet treats.
These chocolate truffles are a little bit naughty, wonderfully indulgent and perfect for sharing at a post-training supper, a celebration or after completing a challenging adventure.
Featuring dark chocolate, coconut, coffee and walnuts, they're the kind of treat that disappears quickly whenever they're served.
Chocolate Truffles
Makes approximately 50 truffles.
Ingredients
125g butter
1⅔ cups icing sugar, sifted
¾ cup rolled oats
¾ cup desiccated coconut
2 level teaspoons instant coffee granules
180g dark chocolate, chopped
30g copha
Walnut halves
Method
Step 1 - Cream the butter and icing sugar together until smooth.
Add the rolled oats, coconut and instant coffee granules and mix well. If using, stir through the Tia Maria.
Roll the mixture into small balls and place in the refrigerator until firm.
Step 2 - Melt the chocolate and copha together over a saucepan of gently simmering water.
Step 3 - Using a skewer, dip each chilled ball into the melted chocolate until coated.
Place onto a tray lined with baking paper and carefully remove the skewer.
Step 4 - Top each truffle with a walnut half while the chocolate is still soft.
Return to the refrigerator until set and keep chilled until ready to serve.
Tips
- If transporting, remember to keep chilled in a cooler bag
- Optional (but recommended): 1-2 tablespoons Tia Maria or your favourite liqueur, see step 1

One of my favourite Diamonds trekking moments was waking up in Brisbane Water National Park, on part of the Great North Walk, surrounded by my Diamond trekking buddies on my 60th birthday.
To make it even more special, I was presented with a beautiful birthday cake, which was enjoyed sitting on a rock, taking in the spectacular views.
