Spinach and Cheese Pie

The perfect addition to your hiking lunch box or a yummy family meal!

Ingredients

1 brown onion

2-3 cloves of garlic

70g pine nuts

250g feta cheese, crumbled

1 cup cheddar cheese, grated

1/4 cup parmesan cheese, grated

5 eggs, salt, pepper, 1 tsp fresh oregano, nutmeg

500grams frozen spinach

2-3 sheets of puff pastry

Method

Preheat the oven to 375 degrees. Dice the onion into small pieces and mince the garlic. Cook both in a small frying pan with 1 tablespoon of olive oil over medium heat until they are soft and translucent. Toast pine nuts

In a bowl combine feta cheese, parmesan cheese, cheddar cheese, eggs, salt, pepper, oregano and nutmeg. Add thawed spinach, strain it first in a colander and press out as much moisture as possible. Add onion, garlic and pine nuts to the cheese/egg/spinach mixture. Stir until well combined.

Grease pie dish and line it with puff pastry. Spread the spinach filling evenly inside the pastry-lined pie dish. Fold the corners of the pastry back and top with the remaining pastry. Brush a whisked egg over the top (this will give the surface a glossy appearance after cooking). Bake the pie for about 30 minutes until golden brown. Allow the pie to rest for about 5 minutes before cutting to allow the filling to set.

A great meal when served with a pear, parmesan, walnut and rocket salad with a honey dijon dressing.
