Orange and Almond Birthday Cake

Jo’s Birthday Cake - A delicious, super moist, easy, gluten-free delight.

Ingredients

2 large washed Navel oranges (the whole thing, don’t peel it)

250g castor sugar

6 eggs

250g Almond meal

1 tsp baking powder

Method

1.       Simmer the whole oranges in boiling water for 2 hours- be careful it doesn’t boil dry. Then cool to room temperature- cut open and remove the seeds (or not if you’re a bit lazy)

2.       Preheat oven to 160 degrees- grease and line a 22cm springform pan with baking paper

3.       Blitz the oranges in a food processor then add rest of the ingredients, blitz till well mixed

4.       Pour into your prepared pan

5.       Bake in the oven for 1 to 1 ¼ hours- or a skewer comes out clean.

6.       Allow to cool in the pan-

7.       Sprinkle with icing sugar and scoff!!
